Ingredients

  • 1 cup (125g) all-purpose flour

  • 2 tbsp sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup (180ml) buttermilk (or milk + 1 tbsp vinegar)

  • 1 egg

  • 2 tbsp melted butter

  • 1 tsp vanilla extract (optional)

Directions

  • Mix Dry Ingredients
    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Mix Wet Ingredients
    In another bowl, beat the egg, then add the buttermilk, melted butter, and vanilla extract. Whisk until smooth.
  • Combine Wet and Dry
    Pour the wet mixture into the dry ingredients and stir gently. A few lumps are okay — don’t overmix!
  • Heat the Pan
    Heat a non-stick pan over medium heat and lightly grease it with butter or oil.


  • Cook the Pancakes
    Pour about 1/4 cup of batter onto the pan. Cook until bubbles form on the surface and the edges look set — about 2-3 minutes.
  • Flip the Pancake
    Carefully flip the pancake and cook for another 1-2 minutes until golden brown.
  • Stack and Serve
    Stack your pancakes high and top with butter, syrup, fruit, or whatever you love.
