1 cup (125g) all-purpose flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup (180ml) buttermilk (or milk + 1 tbsp vinegar)
1 egg
2 tbsp melted butter
1 tsp vanilla extract (optional)
Directions
- Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. - Mix Wet Ingredients
In another bowl, beat the egg, then add the buttermilk, melted butter, and vanilla extract. Whisk until smooth. - Combine Wet and Dry
Pour the wet mixture into the dry ingredients and stir gently. A few lumps are okay — don’t overmix! - Heat the Pan
Heat a non-stick pan over medium heat and lightly grease it with butter or oil. - Cook the Pancakes
Pour about 1/4 cup of batter onto the pan. Cook until bubbles form on the surface and the edges look set — about 2-3 minutes. - Flip the Pancake
Carefully flip the pancake and cook for another 1-2 minutes until golden brown. - Stack and Serve
Stack your pancakes high and top with butter, syrup, fruit, or whatever you love.
