Ingredients

  • 2 lbs baby potatoes (or Yukon gold), halved

  • 3 tbsp olive oil

  • 3 cloves garlic, minced

  • ½ cup grated Parmesan cheese

  • ½ cup grated Parmesan cheese

  • 1 tsp paprika

  • Salt & pepper to taste

  • Chopped fresh parsley for garnish

Directions

  • Preheat the Oven
    Preheat your oven to 400°F (200°C) to ensure crispy potatoes.
  • Prepare the Potatoes
    Wash and dry the baby potatoes.
    Cut them in half to ensure even roasting.
  • Mix the Seasoning
    In a large mixing bowl, combine:
    ✅ Olive oil
    ✅ Minced garlic
    ✅ Grated Parmesan cheese
    ✅ Dried oregano
    ✅ Paprika
    ✅ Salt & pepper
  • Coat the Potatoes
    Add the halved potatoes to the bowl.
    Toss well until all the potatoes are evenly coated with the seasoning mix.
  • Arrange on Baking Sheet
    Line a baking sheet with parchment paper or lightly grease it.
    Spread the potatoes in a single layer, cut side down for maximum crispiness.
  • Roast in the Oven
    Bake for 35-40 minutes, flipping halfway through.
    Potatoes should be golden brown and crispy on the edges.
  • Garnish & Serve
    Sprinkle with fresh chopped parsley.
