Ingredients
For the crust:
1 ¼ cups all-purpose flour
½ tsp salt
½ cup unsalted butter, chilled and cubed
2–4 tbsp ice water
- For the filling:
1 cup light corn syrup
1 cup brown sugar
3 large eggs
¼ cup unsalted butter, melted
1 tsp vanilla extract
½ tsp salt
1 ½ cups pecan halves
Directions
- Step 1: Prepare the Pie Crust
In a mixing bowl, combine flour and salt.
Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, and mix until the dough holds together. - Step 2: Roll Out and Place the Dough
On a floured surface, roll out the chilled dough into a 12-inch circle.
Carefully place it into a 9-inch pie dish, pressing it gently into the dish.
Trim any excess dough, then crimp the edges.
Place the crust in the refrigerator while preparing the filling. - Step 3: Make the Pecan Pie Filling
In a mixing bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt.
Stir until the mixture is smooth and well combined. - Step 4: Assemble the Pie
Remove the pie crust from the refrigerator.
Spread the pecan halves evenly over the bottom of the crust.
Pour the filling mixture over the pecans, allowing them to float to the top. - Step 5: Bake the Pie
Preheat the oven to 350°F (175°C).
Place the pie on the center rack and bake for 50-60 minutes, or until the center is set but slightly jiggly.
If the crust is browning too quickly, cover the edges with aluminum foil. - Step 6: Cool and Serve
Remove the pie from the oven and let it cool completely on a wire rack for at least 2 hours.
Slice and serve with whipped cream or vanilla ice cream.
